  • 1 cup panko breadcrumbs

  • 2 large eggs
  • 2 tablespoons coconut milk
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Juice of 1 fresh lime
  • Fresh cilantro for garnish
  • Coconut oil for frying

Instructions

  1. Rinse fish fillets under cold water and pat completely dry with paper towels.
  2. Squeeze fresh lime juice over all sides of the fillets and let rest for five minutes.
  3. Prepare a breading station with three bowls: one for flour, one with whisked eggs and coconut milk, and one with a mixture of shredded coconut, panko, garlic powder, paprika, salt, and pepper.
  4. Dredge each fillet in flour, shaking off excess.
  5. Dip each fillet into the egg and coconut milk mixture.
  6. Press the fillet firmly into the coconut-panko mixture until evenly coated.
  7. Heat 1/4 inch of coconut oil in a large skillet over medium heat.
  8. Fry the fillets for 3 to 4 minutes per side until deeply golden and flaky.
  9. Drain on paper towels and garnish with fresh cilantro before serving.
