- 2 cups cooked chicken breast (shredded into big chunks)
- ½ cup barbecue sauce (alcohol-free)
- 2 tortillas (10-12 inch burrito size)
- 2 tablespoons Butter (room temperature)
- 2 cups shredded cheddar-jack cheese
- Cilantro (optional garnish)
- Sour cream (optional garnish)
- Guacamole (optional garnish)
- Salsa (optional garnish)
- Ranch dip (optional garnish)
Instructions
- Heat olive oil in a medium skillet over medium heat
- Add sliced red onions to the skillet
- Sauté onions for 3-5 minutes until softened
- Add shredded cooked chicken breast to the skillet
- Stir in the alcohol-free barbecue sauce until evenly coated
- Cook for 2-3 minutes until the sauce is warm and chicken is heated through
- Remove the chicken mixture from the skillet
- Place one tortilla in a large skillet, brushed with 1 tablespoon butter
- Sprinkle half the cheese evenly over the tortilla
- Top with half the chicken mixture
- Fold tortilla closed using a plate to hold it
- Cook over medium heat until golden brown and crispy, 2-3 minutes per side
- Repeat with the second tortilla and remaining ingredients

- Use room temperature butter for better browning and crispiness
- Swap cheddar-jack cheese for other melts like mozzarella or pepper jack if preferred
- Choose a sweet and smoky barbecue sauce for best flavor
