- 2 boneless skinless large chicken breasts
- 2 tbsp fresh cilantro, chopped
- 2 cloves garlic, minced
- 1 small jalapeno, finely diced
- Juice of 1 lime (for salsa)
- Juice and zest of 2 limes (for marinade)
- 1 large ripe mango, diced
- 1/4 cup red onion, finely diced
- 2 tbsp honey
- 1/4 tsp black pepper
- 1/2 tsp smoked paprika
- 1/2 tsp salt (for chicken)
- 1/4 tsp salt and pepper (to taste for salsa)
- 2 tbsp olive oil
- 1 tsp ground cumin
Instructions
- Pat chicken breasts dry with paper towels
- Slice each breast horizontally into two thinner cutlets
- In a shallow dish, combine lime juice and zest, 2 tbsp honey, 1 tbsp olive oil, smoked paprika, salt, and black pepper
- Add chicken cutlets and coat fully
- Marinate for 30-2 hours in refrigerator
- Heat remaining 1 tbsp olive oil in a large skillet over medium-high heat
- Cook chicken 4-5 minutes per side until golden and juices run clear
For salsa:
- Combine mango, red onion, jalapeno, cilantro, lime juice, salt, and pepper in a bowl
Notes
- Marinate chicken at least 30 minutes for best results
- Use frozen mango (thawed) as an alternative
- Add avocado to salsa for extra creaminess
