Ingredients
- 2 medium sweet potatoes, cut into 2.5 cm cubes
- 2 tablespoons avocado oil or olive oil, divided
- 30 grams store-bought taco seasoning
- 500 grams quality ground beef
- 2 cups dairy-free cottage cheese
- 1 ripe avocado
- 1 to 2 tablespoons hot honey
Instructions
- Wash and optionally peel the sweet potatoes and cut into uniform 2.5 cm cubes.
- Toss the potato cubes with one tablespoon of oil and half of the taco seasoning until well coated.
- Arrange the potatoes in a single layer in the air fryer and cook at 200°C (400°F) for 20 minutes, shaking the basket halfway through.
- Heat the remaining oil in a large skillet over medium heat and brown the beef mince, breaking it up with a spoon.
- Stir in the remaining taco seasoning and a splash of water, cooking until the liquid evaporates and the beef is well-seasoned.
- Mash the avocado in a small bowl and season with a pinch of salt.
- Divide the potatoes into four bowls and top with the beef, a dollop of dairy-free cottage cheese, and mashed avocado.
- Drizzle each bowl with hot honey before serving.

- Ensure all sweet potato cubes are uniform in size for even cooking.
- For extra crispiness, do not overcrowd the air fryer basket.
- You can add a squeeze of lime juice to the avocado for extra brightness.
