- 2 tablespoons avocado oil or olive oil, divided
- 30 grams taco seasoning (ensure halal compliant)
- 500 grams beef mince
- 2 cups dairy-free cottage cheese
- 1 large avocado
- 1 to 2 tablespoons hot honey
Instructions
- Wash, peel, and cut sweet potatoes into uniform 2.5 cm cubes.
- Toss potato cubes with one tablespoon of oil and one teaspoon of taco seasoning in a mixing bowl until coated.
- Place potatoes in the air fryer in a single layer and cook at 200 degrees Celsius for 20 minutes, shaking halfway through.
- Heat the remaining tablespoon of oil in a large frying pan over medium-high heat.
- Add beef mince to the pan, breaking it into small crumbles until browned.
- Stir in the remaining taco seasoning and a splash of water, cooking until the liquid evaporates.
- Mash the avocado in a small bowl with a pinch of salt.
- Assemble bowls by layering potatoes, seasoned beef, cottage cheese, and mashed avocado, then finish with a drizzle of hot honey.
Notes
- Ensure sweet potatoes are completely dry before coating in oil to achieve maximum crispiness.
- For extra heat, add fresh chili flakes or a dash of cayenne pepper to the beef as it cooks.
- Store leftovers in separate airtight containers in the refrigerator for up to 3 days.
