Instructions

  1. Combine soy sauce, honey, fresh lime juice, garlic, and grated ginger in a bowl. Whisk
  2. Season the marinade with salt and pepper
  3. Trim excess fat from chicken breasts and place in a resealable bag or dish
  4. Pour marinade over chicken, ensuring even coating
  5. Refrigerate for 30 minutes to 4 hours
  6. Remove chicken from refrigerator and let sit at room temperature for 10 minutes
  7. Remove pineapple’s skin and core
  8. Cut the pineapple into 1-inch thick rings or chunks
  9. Brush pineapple pieces with olive oil
  10. Preheat grill to 375-400°F
  11. Grill chicken breasts until well-charred and cooked through (5-7 minutes per side)
  12. Grill pineapple until caramelized and slightly charred
  13. Serve chicken and pineapple immediately, optionally garnished with lime wedges
