  • 5 ounces sun-dried tomato strips in oil, drained
  • 1 3/4 cups half and half
  • 3 cups baby spinach leaves
  • 1/2 cup fresh grated parmesan cheese
  • 1 teaspoon cornstarch mixed with 1 tablespoon water, optional
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season salmon fillets with salt and pepper.
  3. Sear salmon for 5 minutes per side until golden and cooked through.
  4. Remove salmon from the pan and set aside.
  5. Melt butter in the same pan with residual juices.
  6. Add garlic and sauté until fragrant.
  7. Add diced onion and cook until translucent.
  8. Pour in the non-alcoholic stock and reduce by half.
  9. Add sun-dried tomatoes and fry for two minutes.
  10. Reduce heat to low and pour in half and half, stirring gently.
  11. Add spinach and cook until wilted.
  12. Stir in parmesan cheese and optional cornstarch slurry to thicken.
  13. Return salmon to the pan and garnish with fresh parsley.
