- 2 (6-ounce) chicken breasts, boneless and skinless
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt to taste
- Pepper to taste
- 1 cup fresh parsley, finely chopped
- 2 tablespoons fresh cilantro, chopped (optional)
- 3–4 garlic cloves, minced
- 2 tablespoons apple cider vinegar (substitute for red wine vinegar)
- 1/2 teaspoon crushed red pepper flakes
- 1/2 teaspoon dried oregano
- 1/2 cup olive oil
- Salt for chimichurri to taste
- 1/2 cup cooked rice or quinoa
- 1/2 cup cherry tomatoes, halved
- 1/2 cup cucumber, sliced
- 1/2 avocado, sliced
- 1/4 cup pickled onions (optional)
- 1/2 cup roasted vegetables (like bell peppers or zucchini)
- Fresh cilantro or parsley for garnish
Instructions
- Pat chicken breasts dry with paper towels
- Place chicken between two plastic wrap sheets
- Pound chicken to 1-inch thickness using a meat mallet
- Transfer chicken to a shallow dish or resealable bag
- Drizzle with 1 tablespoon olive oil and rub in spices (paprika, garlic powder, onion powder, salt, pepper)
- Cover and refrigerate for at least 30 minutes
- Preheat grill or skillet to medium-high heat
- Grill chicken for 5–7 minutes per side until fully cooked
- In a blender, combine parsley, garlic, apple cider vinegar, red pepper flakes, and oregano
- Slowly blend in 1/2 cup olive oil until smooth
- Taste and adjust salt and pepper
- Assemble: Add a base of cooked rice or quinoa to bowls
- Top with grilled chicken slices, cherry tomatoes, cucumber, avocado, pickled onions, and roasted vegetables
- Drizzle chimichurri sauce over the bowls
- Garnish with fresh herbs
Notes
- Chimichurri can be made in advance and stored in the refrigerator for up to 2 weeks
- Use gluten-free grains if needed
- Marinate chicken up to overnight for deeper flavor
- Optional: Replace rice with cauliflower rice for a low-carb version
- Serve with a squeeze of lime for extra brightness
