  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt to taste
  • Pepper to taste
  • 1 cup fresh parsley, finely chopped
  • 2 tablespoons fresh cilantro, chopped (optional)
  • 34 garlic cloves, minced
  • 2 tablespoons apple cider vinegar (substitute for red wine vinegar)
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 teaspoon dried oregano
  • 1/2 cup olive oil
  • Salt for chimichurri to taste
  • 1/2 cup cooked rice or quinoa
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, sliced
  • 1/2 avocado, sliced
  • 1/4 cup pickled onions (optional)
  • 1/2 cup roasted vegetables (like bell peppers or zucchini)
  • Fresh cilantro or parsley for garnish

Instructions

  1. Pat chicken breasts dry with paper towels
  2. Place chicken between two plastic wrap sheets
  3. Pound chicken to 1-inch thickness using a meat mallet
  4. Transfer chicken to a shallow dish or resealable bag
  5. Drizzle with 1 tablespoon olive oil and rub in spices (paprika, garlic powder, onion powder, salt, pepper)
  6. Cover and refrigerate for at least 30 minutes
  7. Preheat grill or skillet to medium-high heat
  8. Grill chicken for 5–7 minutes per side until fully cooked
  9. In a blender, combine parsley, garlic, apple cider vinegar, red pepper flakes, and oregano
  10. Slowly blend in 1/2 cup olive oil until smooth
  11. Taste and adjust salt and pepper
  12. Assemble: Add a base of cooked rice or quinoa to bowls
  13. Top with grilled chicken slices, cherry tomatoes, cucumber, avocado, pickled onions, and roasted vegetables
  14. Drizzle chimichurri sauce over the bowls
  15. Garnish with fresh herbs

Notes

  • Chimichurri can be made in advance and stored in the refrigerator for up to 2 weeks
  • Use gluten-free grains if needed
