  • 5 cloves garlic (minced)
  • 6 ounces tomato paste
  • 3 cups beef stock
  • 2 cups chicken stock
  • 3 medium potatoes (cut into chunks)
  • 5 medium carrots (cut into chunks)
  • Steamed rice (for serving)
  • Chopped cilantro (optional garnish)

Instructions

  1. Place the lamb chunks in a large bowl and toss thoroughly with all spices and salt. Cover and refrigerate overnight.
  2. Preheat oven to 325 degrees F.
  3. Heat oil in a large Dutch oven over medium-high heat and sear the lamb in batches until golden brown.
  4. Remove meat and set aside.
  5. Add onions, garlic, and tomato paste to the same pot and fry until onions are soft.
  6. Return meat to the pot, pour in beef and chicken stocks, cover, and transfer to the oven for 2 hours.
  7. Remove from oven, stir in potatoes and carrots, and return to the heat uncovered for an additional 45 minutes until vegetables are tender.
